As a Culinary Trainee, we offer a learning environment overseen by an ACF Certified Executive Chef and a commitment to you as a learner.

 

You will be responsible for enhancing the overall Resident experience through the provision of exceptional food by bringing a desire for culinary knowledge and the ability to complete work on-time, each day, with the energy it takes to thrive in a fast-moving environment. This is to be handled in The Sterling Touch professional, friendly, courteous, helpful and timely manner, resulting in a very high level of satisfaction for Residents and their guests. 

 

Essential Functions as a Culinary Trainee:

  • Participates in Start Sterling! line up each day.
  • Greets the Residents, guests, fellow employees and vendors in a friendly and courteous manner.
  • Prepping and preparing vegetables, fruits, salads, dressings and garnishes.
  • Learns how to cook and prepare eggs, meats, pancakes and other breakfast foods in an ala carte setting.
  • Learns how to prepare sandwiches, salads and other simply prepared foods in an la carte setting.
  • Learns how to cook and prepare pastas, potatoes, and grains.
  • Keeps all refrigeration, storage, and working areas in clean, working condition to comply with health department regulations.
  • Ensures all equipment in working areas is clean and in proper working condition.
  • Ensures food allergy cross contamination prevention.
  • Improves Interpersonal Skills/Communication Skills
  • Learns the concepts of scratch cooking, mise en place, professional kitchen behavior, kitchen resiliency, etc.
  • Learns basic Line Cooking Skills.
  • Learns basic knife skills and knife safety.
  • Responsible for simple plating and presentation techniques.

 

Essential Functions as an Advanced Culinary Trainee:

  • Participates in Start Sterling! line up each day.
  • Greets the Residents, guests, fellow employees and vendors in a friendly and courteous manner.
  • Responsible for advanced food presentation and plating.
  • Learns advanced butchery and protein fabrication skills.
  • Learns advanced knife skills.
  • Learns how to cook stocks, broths, sauces and soups.
  • Learns Food Science and recipe building.
  • Advances Leadership and Culinary Leadership skills.
  • Learns Food Costing and menu science.

 

Education:

  • Any combination of education and experience equivalent to graduation from high school or any other combination of education.
  • Culinary or Apprenticeship program preferred.

 

Experience:

  • No experience required.
  • Desire to advance culinary knowledge and skills required.
